A dehydrator’s heating element, fans and vents simultaneously work to direct hot air over the food, accelerate surface evaporation and warm the food causing moisture to be also released from its interior. This process continues until the food is dried to a substantially lower water content, usually less than 20%.
Food dehydrators—either commercially made or homemade—give a good-quality dried product. Oven drying works well if you can set your oven to a temperature of 140 to 150°F. Open the oven door 2 to 3 inches to allow moisture to escape. A convection oven works well because it combines low heat with a fan to move the air.A food dehydrator can cook food at a constant temperature and also provide it with sufficient air to keep it from getting hardened. If a higher temperature is applied, the food can get hard but stay moist inside, which will spoil it quickly. So a food dehydrator speeds up your cooking, better than an oven might.
Fiber: no change. Vitamin A: fairly well retained under controlled heat methods. Vitamin C: mostly destroyed during blanching and drying of vegetables. Thiamin, riboflavin, niacin: some loss during blanching but fairly good retention if the water used to rehydrate also is consumed.
There are two main types: manual and sensor. Manual models have at least two or three settings: cottons, synthetics, and delicates. Sensor dryers usually have more programs, allowing you to choose the most suitable setting.
